Pumpkin pancakes

I tried a new recipe today for spiced pumpkin pancakes, and I was really happy with it, so I thought I'd share.

First off, I always bake my jack-o-lantern from Halloween, pulp it all up, and freeze it for my holiday baking. Yum!


Here's the batter-it looks all fluffy from beating the egg white until they're stiff:

These pancakes are great, really light, with an almost creamy texture from the pumpkin.  I have another pumpkin pancake recipe I enjoy as well, but it produces a really dense, cake-like pancake. It's nice to have an alternate recipe for when I don't want such a heavy breakfast.
